The cold weather came in this weekend. We hunkered down in the house to stay warm.

On Saturday we made homemade vegetable beef soup with dumplings.

Recipe:
Boil 1 soup bone on medium/low for 5 hours
Take out soup bone and meat set aside
Cut up veggies and add to the broth.
I use Cabbage, celery, potatoes (cut in half) carrots, quart of tomatoes ( I used my own stewed tomatoes that I canned)
Cut up the boiled meat and add back into the broth.
Boil for 30 minutes or until potatoes are tender to fork poke

When tender remove potatoes and place into separate bowl
mash potatoes and add 1/2 stick of butter – cream together
add in 1/4 cup milk
add 2 eggs – mix all this well
add in flour 1/4 cup at a time until thickened. I end up adding a little over a cup to a cup and a half of flour.

Once dumplings are mixed take a tablespoon and dunk into the hot soup then scoop up a spoonful and drop into the soup. Dumplings will sink to bottom at first. Continue this step for 8 to 10 dumplings. cover and bring to boil as the soup boils the dumplings will rise once dumplings are at the top the soup is done.

Serve and enjoy. If you have extra dumpling mix you can add in the rest after you have removed some.
