Spring is here, Let’s plan meals!

This week we have had successful meals to keep on the rotation. I will add the recipes to the recipe page. Sunday night we had crock pot round steak. It was so tender you cook on low for 6 to 8 hours and it just fell apart. I made fingerling potatoes and mashed them with the skins on. All and all I would give the meal a 9 out of 10.

Monday was salmon patties and fried potatoes with onion, green pepper and fresh mushrooms. Also had corn on the cob. All was very good. Not many left overs. I would give this a 8 out of 10.

For the week for breakfast I did make a egg bake that was very simple that you can customize as you wish. Heats up very well. I also made a triple batch of banana muffins to use up a big batch of bananas. They turned out very well!

We have enjoyed a nice roasted chicken dinner and with the leftover chicken I am going to work on a chicken salad. Along with the chicken I also made air fryer baked potatoes. We have some top the tater for the baked potatoes and they were amazing.
